Spray drying is a type of moisture reduction process used to produce dry powders. In this method, the desired solution is sprayed into a heated chamber through a specific mechanism, where it loses moisture and dries. This technique is commonly used to convert liquids into powder form. Spray dryers are widely applied in various industries, including food production, chemicals, and pharmaceuticals. The final product can be tailored to the desired size, shape, and moisture content through this process.

The spraying process is performed using a component called an atomizer. The solution is pumped into the atomizer using a high-powered pump. There are two main types of atomizers: nozzle atomizers and rotary disk atomizers. Nozzle atomizers feature a fixed cone, where the solution is sprayed by reducing the cross-sectional area and increasing the velocity of the solution. Rotary disk atomizers, on the other hand, use a high-speed rotating disk, where the solution is thrown from the edges and atomized into fine particles.

This atomization increases the surface area of the solution, allowing for rapid evaporation of the water. The majority of the dried material falls as a solid into a collection hopper, while some particles are carried by the hot air to a cyclone and bag filter for further separation.
